cqszm:1.鸡蛋放冰箱的话要先拿出放到常温再打发,气温低的话可能需要温水浴打发 奶油则相反,冷藏状态直接打发,或者冰水浴打发2.蛋清打发时不能混水混油,蛋黄也是油;另外要注意发泡状态,戚风做裱花糕底需要打到硬性发泡,如果是做蛋糕卷则湿性发泡就够了3.打发要一气 .. (2017-05-19 10:57)
